St Vincent is known as the deacon of Saragossa in Spain as well as a martyr. He was friends with Saint Valerius of Saragossa and served as his deacon. He was imprisoned and tortured in Valencia, Spain for his faith during the persecutions of Diocletian; part of his time was spent being burned on a gridiron. While in prison, he converted his jailer. Was finally offered release if he would give up the scripture texts for burning, but he refused. Vincent died in 304 and is the patron saint of Valencia, Saragossa, vinegar-makers and wine-makers.
